Six Course Dinner w/Wine Pairings
5pm and 8 pm seatings
First Course
Amuse Bouche: Kumamoto Bay Oyster, pink peppercorn and mint mignonette, popped corn with bubbly
Second Course
Torchon of Foie Gras, passion fruit and honey butter sauce, sauternes and chamomile tea jelly, roasted black garlic, purple grape mustard, micro radish greens, Brioche crostini with sauternes
Third Course
Butter poached Blue Spot Prawn, Basil Gnocchi, Parmesan cream, smoked bacon, marinated baby tomatoes, lambs ears lettuce, lemon evoo with sancerre
Fourth Course
House smoked Steel Head, mushroom fricasee, carmelized onion, chevre, hazelnut, pickled black peppercorn bread pudding, braised greens, Pinot Noir reduction sauce with a pinot noir
Fifth Course
Beef Four Ways! Marinated and Grilled Teres Major Steak, braised Short Rib, Tenderloin Tartar, Marrow foam, with "mushy peas," roasted root vegetables, braising jus, Oregon black Truffle and Horseradish cream with Barolo
Sixth Course
30 second pistachio sponge cake a la Albert Adria, Ganache, caramel cream, espresso syrup, candied orange with a banyuls
